I found this recipe online and decided to try it yesterday. Gotta tell you …. these really do taste just like a cinnamon roll only with less guilt! Not as many carbs, not as much sugar … so they have to be better for you right? There are few steps to follow but well worth the effort.

Cookie Ingredients:

  • 3 cups all-purpose flour
  • 2 tsp Baking Powder
  • 1/4 tsp salt
  • 2 tsp Cinnamon
  • 1/2 cup unsalted butter-softened
  • 1/2 cup granulated sugar
  • 1/2 cup light brown sugar, packed
  • 1 large egg
  • 1 1/2 tsp vanilla extract
  • 1/2 cup milk

  1. In a medium bowl, whisk together the flour, baking powder, salt and cinnamon; set aside.
  2. In a large mixing bowl, cream butter and sugars together. Add the egg and vanilla and mix. Alternately add flour mixture with milk, starting and ending with flour. Roll the dough into a large ball. Cover with plastic wrap and refrigerate for 1 hour.

Filling Ingredients:

  • 1/2 cup unsalted butter-softened
  • 1 1/2 cups light brown sugar
  • 1 tbsp cinnamon
  • 1/4 tsp salt

  1. In a medium sized mixing bowl, beat together the butter, brown sugar, cinnamon and salt until smooth.
  2. After 1 hour, roll out the dough on a lightly floured surface, into a rectangle. Dough should be about 1/8 inch in thickness.
  3. Spread filling over entire dough rectangle, leaving a small border at both long ends.
  4. Starting from the long side closest to you, roll the dough in a tight log. Pinch the edges to seal. Cover dough with plastic wrap and refrigerate for 30-45 minutes.
  5. Preheat oven to 375 degrees. Slice cookie log into 24 equal slices. Place 2 inches apart on a parchment covered baking sheet. Bake 12-15 minutes, being careful not to overbake. They should be a bit tender to the touch when you take them from the oven, but not doughy in appearance. Allow them to rest for 5 minutes before transferring to a wire rack to cool completely.

Frosting Ingredients:

  • 4 oz cream cheese, softened
  • 4 tbsp unsalted butter, softened
  • 1 cup confectioners sugar, sifted
  • 1/4 tsp salt
  • 1 tsp vanilla extract

  1. Using a hand mixer, beat all ingredients until smooth. Use a small spatula to frost each cooled cookie. Enjoy!
