If you like breakfast breads, you have to make this one! The aroma in my kitchen right now is simply that of coconut and almond. This is bread you will enjoy any time of the day. Here’s what you need and how to prepare it.


  • 2 large eggs
  • 1 cup granulated sugar
  • 1/2 cup shortening
  • 1 tsp coconut extract
  • 1/2 cup buttermilk
  • 1/2 tsp salt
  • 1/2 tsp baking powder
  • 1/4 tsp baking soda
  • 1 1/2 cups all-purpose flour
  • 1/2 cup coconut
  • 1/2 cup almonds, chopped


  • 1/2 cup granulated sugar
  • 1/4 cup water
  • 1 tbsp butter
  • 1 tsp almond extract


  1. Preheat oven to 325 degrees. Spray and line one loaf pan; set aside.
  2. Beat eggs, sugar, shortening and extract together
  3. Slowly add in buttermilk and dry ingredients. Pour batter into prepared loaf pan. Smooth out the top and tap the pan on the counter to help release any air bubbles. Bake for 60-70 minutes until knife comes out clean.
  4. About 5 minutes before bread comes out of the oven, bring the water and sugar for the topping to a boil. Whisk a few times and continue the boil for 2 minutes. Remove from the heat, add butter and almond extract.
  5. Remove bread from oven when done. Immediately pour sugar liquid over the bread. Allow bread to set in pan for two hours before removing from pan.
