I can just hear it now. Family, friends and readers of this blog may even react and send me “interesting” responses. Actually this recipe was requested by my cousin Mary. But I want everyone to sit back and give this one some time to soak in. Unless you absolutely hate sauerkraut, this hotdish really tastes much better than it sounds. There are many variations out there for it, but my mom always made it with rice …. and we liked it! Well, not everyone liked it. My kids hate sauerkraut. We had this house rule for my kids that they had to have at least one spoonful of everything that was made for dinner. I can not tell you how much fun it was to sit back and watch them attempt to get this one little (big tablespoon) spoonful into their mouth and get it swallowed. Oh man … it still makes me laugh! I probably am not doing myself any favors in my attempt to get you to keep an open mind. Just trust me …. I think you’ll like it. Here it is:
- 1 can or jar of sauerkraut
- 1/2 cup Minute Rice
- 1 can Cream of Potato Soup
- 1 lb hamburger (option- mild to spicy sausage)
- 1 medium onion-diced
- 1 tbsp butter
Directions: In large frying pan, add butter and onion and cook for 3-4 minutes. Add hamburger (or sausage) and cook until browned. Drain and rinse the sauerkraut until cold water. This will help reduce the “sour” in the kraut! Once meat is browned, add rice, sauerkraut and soup. Mix together and transfer to a medium sized casserole. Bake for 45 minutes. Serve immediately with salad and warm bread – a full meal for any family!
