I like cookies that are slightly chewy and spicy. My favorites would probably include ginger, cinnamon or cardamom. So today I found this recipe online that had a little of each so I decided to try it. I modified it a bit to include cardamom and I wasn’t sorry that I did. Here you go.


  • 1 cup butter – softened
  • 1 1/2 cups brown sugar
  • 1/4 cup honey
  • 2 eggs
  • 3 cups all-purpose flour
  • 4 tsp ground ginger
  • 1 tsp ground Cardamom
  • 2 tsp Cinnamon
  • 2 tsp Baking Soda
  • 1 tsp Kosher Salt
  • 1/2 cup granulated sugar mixed with 2 tbsp ground Cardamom for rolling


  1. Preheat oven to 375.
  2. In a large bowl, cream butter and brown sugar until fluffy. Add honey and eggs, beat until well combined.
  3. In a separate bowl, combine flour, ginger, soda, cinnamon, 1 tsp cardamom and salt. Whisk together. Add to the wet mixture and mix until just combined.
  4. Roll dough into golf ball-sized balls – roll in sugar/cardamom mixture on all sides. Place balls onto baking sheet leaving 2-3 inches between. Do not flatten as these will spread. Bake 11-12 minutes. Remove from oven and allow to rest on baking sheet for 5 minutes before transferring to a wire rack to fully cool
